The austerity of Taburno and the verticality of limestone. In an extreme and stony terroir, the vine is stripped to the essentials. The result is a Pinot Noir and a Chardonnay that feel sculpted, combining the rigour of great terroirs with the piercing light of the South.

DUALISM AND MATTER

Minimal intervention to preserve the rigour of Pinot Noir and the verticality of Chardonnay. The matter evolves through steel, French barriques, and TAVA amphorae, but it is time that defines the work. We reject all commercial urgency: 24 months of ageing are only the beginning. Every vintage dictates its own rules, and the wine leaves the cellar only at the moment of exact maturity.

Simonit & Sirch Method

CONTINUITY OF FLOW

We do not mutilate the vine; we guide it. The Simonit & Sirch method teaches us to respect the lymphatic flow of the vine, allowing the sap to flow freely without encountering obstacles in the dead wood.

LIVING WOOD

We build the structure of the plant over time. We allow the vine to grow and branch naturally, accumulating living wood that becomes both a reserve of energy and the historical memory of the vineyard.

RESPECTFUL CUTS

Every cut is a wound that the plant must heal. We perform only small cuts on young wood, avoiding large sections that cause internal dieback, ensuring the vine's health and resilience for generations.

LONGEVITY

A healthy vineyard lives longer and produces more complex wines. Through this tailored pruning, we extend the life of our plants, ensuring a consistent quality that endures for decades.
